  • Publication number: 20240156109
Abstract: The present invention relates to a method of producing a dough, comprising (i) admixing a lactic acid producing microorganism and a propionic acid producing microorganism to flour and water; and (ii) incubating the admixture of step (i) for a first incubation period, wherein the lactic acid producing microorganism produces lactic acid and the propionic acid producing microorganism produces propionic acid, wherein the lactic acid producing microorganism and the propionic acid producing microorganism are capable of growing in a medium consisting of 50% (w/w) flour in water. The present invention also relates to a composition, preferably a starter culture for bakery good production, comprising viable cells of a lactic acid producing microorganism and viable cells of a propionic acid producing microorganism, wherein the lactic acid producing microorganism and the propionic acid producing microorganism are capable of growing in a medium consisting of 50% (w/w) flour in water.

  • Patent number: 9359612
Abstract: The invention relates to a nucleic acid sequence encoding an itaconate transporting Major Facilitator Superfamily Transporter (MFST) gene sequence and the protein encoded thereby. Preferably said sequence is the nucleic acid that comprises the sequence of ATEG_09972.1 of Aspergillus terreus or homologues thereof. Overexpression of the protein enhances the production of itaconic acid in micro-organisms.

  • Patent number: 9290772
Abstract: The invention relates to a nucleic acid sequence encoding an Aspergillus mitochondrial tricarboxylic acid transporter that can be used in the production of itaconic acid in micro-organisms. Preferably said transporter protein is the protein encoded by the nucleic acid which is located on a chromosome segment of A. terreus that also harbors other genes involved in the itaconic acid biosynthesis and the lovastatin biosynthesis. Also, vectors, hosts and transformed micro-organisms are part of the invention.

  • Publication number: 20110217402
Abstract: A process for the preparation of a non-viable probiotic composition having anti-allergic (i.e. allergy preventive and/or anti-allergic in a therapeutic sense) properties, the process including the steps of (a) subjecting LGG to cultivation in a suitable culture medium using a batch process; (b) harvesting the culture supernatant at a late exponential phase of the cultivation step; (c) removing liquid contents from the culture supernatant so as to obtain the composition. Also, a composition comprising a proteinaceous mixture, said composition being obtainable by the above process, and the use thereof in a dietetic product preferably for targeting expecting mother's, infants, or children as well as application in food for specific medical purposes.
