    Abstract: Liquid or gel antimicrobial compositions are described. The compositions comprise enzyme that is able to convert a substrate to release hydrogen peroxide; and substrate for the enzyme. The compositions do not comprise sufficient free water to allow the enzyme to convert the substrate, or have a water activity (aw) of 0.7 or less. The compositions may comprise polymer, and there may be greater than 50%, by weight, of the polymer and/or less than 20%, by weight, of sugar in the composition. The compositions may comprise non-aqueous solvent, no honey and 5% or less, by weight, of the substrate in the composition. There may be greater than 50%, by weight, of the non-aqueous solvent and/or there is less than 20%, by weight, of sugar in the composition.
