    Abstract: A deep fat fryer with continuous oil filtering and purging of sediments therefrom during uninterrupted fryer operation is provided. The filter includes a cylindrical hollow housing with a first end and a second end and a hollow cylindrical screen with a longitudinal axis and first and second ends. The screen is disposed coaxially within the hollow housing to define an annulus therebetween. A piston mounted within the screen and reciprocatingly movable along the longitudinal axis between the first and second ends of the screen. A pump, seal, and associate motor are provided to provide continuous oil flow through the filter and the remainder of the fryer. A heat exchanger is provided downstream of the pump to transfer heat from the fryer to the oil flowing through the heat exchanger.

    Abstract: A gas fired deep fat fryer is described wherein in a first embodiment a single fry pot is used and in a second embodiment a split fry pot or a pair of matching fry pots are provided. In the first embodiment two immersion tubes are spaced apart and extend from the front toward the rear of the fry pot with a third pass immersion tube extending from the front through the rear into a flue. Combustion products travel the length of a burner tube through an immersion tube and return through a jet impingement baffle and then make a third pass from front to rear and into the flue. In the embodiment having split fry pot, a single burner and immersion tube therefor is provided with a separate third pass baffle tube.

    Abstract: A deep fat fryer is described which is heated by burner tubes extending through the central portion thereof and by burners therein which are metal mesh. The burners support combustion only on the surface so that the primary heat source is infra-red energy to the burner tubes. Exhaust gases from the burner tubes are circulated around sides and upper portion of the fryer only so that the central and upper portions of the tank are heated and the lower portion serves as a sump.
