    Abstract: Provided is a powdered oil or fat composition comprising as essential components: an edible oil or fat; an indigestible dextrin; and a casein salt. It is preferable that the powdered oil or fat composition comprises 5 to 84.9% by mass of the edible oil or fat, 5 to 85% by mass of the indigestible dextrin, 0.1 to 10% by mass of the casein salt, and 0.1 to 2% by mass of the edible emulsifier. This makes it possible to provide a powdered oil or fat composition from which no oil or fat bleeds out and which is excellent in flavor, texture, flowability, and water-dispersibility, and a method for producing the powdered oil or fat composition.
