Abstract: Disclosed is a composition comprising a dispersion of an ingredient in a fat matrix, optionally wherein the ingredient is selected from the group comprising a macronutrient, a micronutrient, a dietary bioactive, a pharmaceutical ingredient, and combinations thereof, further optionally, wherein the dispersion is a uniform dispersion. In some embodiments, the macronutrient is a protein, a carbohydrate, a second type of fat in addition to the one forming the primary fat matrix, water, or a combination thereof. Also disclosed is a process for preparing a dispersion of an ingredient in a fat matrix, optionally wherein the ingredient is selected from the group comprising a macronutrient, a micronutrient, a dietary bioactive, a pharmaceutical ingredient, and combinations thereof, further optionally, wherein the dispersion is a uniform dispersion.
