    Abstract: Disclosed herein are materials and methods for the production of high concentrations of ethanol from plant starch material broken down into disaccharide and trisaccharide sugars such as maltose, isomaltose, and maltotriose from uncooked starch. Herein is also described use of a yeast strain capable of fermenting high maltose syrups into ethanol without the need to convert disaccharides or trisaccharides into glucose using exogenous glucoamylases.
