Abstract: The present invention provides a liquid composition comprising one or more steviol glycosides, wherein the one or more steviol glycosides comprise Rebaudioside O. The present invention also provides a method of making a liquid composition comprising one or more steviol glycosides, wherein the one or more steviol glycosides comprise Rebaudioside O. The liquid compositions are useful for applications such as beverages, carbonated beverages, concentrates, beverage concentrates, throw syrups, or portable liquid concentrate tabletop applications.

Abstract: An edible consumable composition comprises rebaudioside A in an amount less than or equal to 30 ppm and monatin in an amount of less than or equal to 4 ppm. This combination of rebaudioside A and monatin has been found to provide food and beverages with excellent sweetness characteristics, and additionally provide excellent taste profiles. Methods of making edible consumable compositions and formulating reduced sugar compositions are also described.

Abstract: A shelf stable beverage composition which comprises a liquid having a reduced dissolved O2 content, a high intensity sweetener comprising monatin, and an edible antioxidant. An additional embodiment of the invention is a shelf stable packaged beverage which comprises a container having a wall, at least a portion of which transmits visible or UV light, a beverage composition in the container, the beverage composition being comprised of water, monatin and an antioxidant, and where such beverage composition has a reduced dissolved O2 content.

Abstract: Calcium-containing monatin compositions exhibit an enhanced sweetnessas compared to comparable compositions containing monatin in the absence of calcium. Due to the enhanced sweetness from monatin in combination with calcium, less monatin is required to achieve a particular sweetness level than would be needed in the absence of calcium. The calcium-containing monatin compositions include food products and beverages.

Abstract: There is disclosed a composition comprising at least one of a compound selected from the group consisting of a bioflavonoid, a beta-1,3-beta-1,4-polymer of glucose having a weight average molecular weight (MW) of not greater than 1000 kDa, and a sterol. Moreover, there is disclosed a food or beverage or health supplement product comprising the disclosed composition. Further, there is disclosed a method of lowering blood serum cholesterol levels comprising administering to a patient in need thereof an effective amount of the disclosed composition.
