    Abstract: A hollow pressure cooking vessel comprises a bottom, a top and sides. A steam reservoir is provided in the bottom and radiant heaters are provided in the top. The interior of the top is a dome or has sloped sides and radiant heaters are spaced externally to the top. Food to be cooked is located on a tray disposed between the dome and the base. An optional vacuum pump is provided to evacuate the interior of the vessel and heaters are provided to heat the entire vessel to generate steam from the reservoir while maintaining the sides and the temperature above the cooking temperature of the food to be cooked within the vessel.
