  • Publication number: 20160025351
Abstract: The system described herein relates to a baking oven having a baking chamber which is provided with an outlet opening leading to a flue. Air is able to escape from the baking chamber through the outlet opening. A fresh air opening with a motor-adjustable flow cross section is provided between the baking chamber and the surroundings. The system adjusts the pressure conditions within the baking chamber optimally throughout the baking operation. A pressure sensor measures pressure in the baking chamber and passes the measurement signals to a control unit which controls the adjustable flow cross section of the fresh air opening on the basis of the measurement signals from the pressure sensor.

  • Publication number: 20150316270
Abstract: A steam generator for an oven, includes at least one heat transfer element and at least one water conduit which carries water to the heat transfer element. The system optimizes the targeted introduction of steam into a defined space and the removal thereof from the space. This is achieved by means of at least one pressure increasing device which increases the water pressure, such as e.g. a compressed air line through which compressed air is fed to the water.

  • Publication number: 20110155116
Abstract: A baking oven includes an oven housing which has a baking chamber for receiving a baking carriage, a heating device, a fan which generates a flow of a heating medium from the heating device into the baking chamber and back, and a steam system which is arranged in the baking chamber and comprises at least one metal heat storage body and a water supply device. The system described herein provides a baking oven of the type in question in such a way that the thermal energy is optimally used. The steam system is next to a steam heater, which is formed by at least one exhaust gas channel, which runs in a wall of the baking chamber and conducts the exhaust gas of a burner out of the oven housing.

  • Publication number: 20100000510
Abstract: A baking oven has an oven housing, an oven door which is connected to the oven housing with a hinge at one side, and cooperating sealing elements on the door and in the area of the door opening of the oven housing. The sealing elements include a flexible seal and a seal-contact surface. The sealing elements situated in the vicinity of the upper edge of the door and those being situated in the vicinity of the lower edge of the door having different designs. The sealing elements provided on the door near the upper and lower door edges are releasably attached to the door, so they are interchangeable to improve the ease of installing the door alternatively with a right hinge or a left hinge.

  • Patent number: 6909069
Abstract: This invention relates to a baking oven (1), in particular a baking cabinet which has a baking chamber (2) in which the goods to be baked can be placed, a unit (3) for heating a heating medium which has an inlet (4) to receive the heating medium from the baking chamber (2) and an outlet (5) for dispensing the heated heating medium into the baking chamber (2) and a first flow channel (6) for conveying the heating medium between the baking chamber (2) and the inlet (4) and a second flow channel (7) for conveying the heating medium between the outlet (5) and the baking chamber (2). To permit simple regulation of the flow of heating medium, it is provided according to this invention that a throttle element (8, 9) is installed in the area of at least one of the flow channels (6, 7) so that the flow resistance in the respective flow channel (6, 7) can be varied.
