    Abstract: The invention relates to a foamed material and to a method for the production of said foamed material. According to the inventive method, foamed material is produced with nanosized foam bubbles Z1 without the need to surmount the energy barrier which usually occurs during phase transitions and nucleation processes. The aim of the invention is to produce a foamed material in a controlled manner, said material having a foam bubble density of 1012-1018 per cm3 and an average foam bubble diameter of 10 nm-10 ?m hat. The inventive method is based on the dispersion of a second fluid K2 the form of pools Po in a matrix of a first fluid K1 involving supramolecular interaction of an amphiphile K3. The first fluid K1 is provided as a matrix in the reaction chamber RK and the second fluid K2 is provided in pools. The second fluid K2 is transformed into a near-critical or overcritical state with a near-liquid density by modifying the pressure and/or temperature.

    Abstract: The invention relates to a package for dispensing a foamed milk product. This package includes an aerosol can which contains a liquid phase in which a propellant gas is dissolved. The can is provided with a valve and a nozzle immediately downstream of the valve for spraying and foaming of the liquid phase. The nozzle has a central borehole and at least one lateral orifice which opens into an outlet tube. As the liquid phase is dispensed through the nozzle, a foam is generated.

    Abstract: A UHT-treated or sterilized or ultrapasteurized milk base product is obtained without the presence of thickening or gelling agents by adding calcium glycerophosphate and a calcium chelating agent to a milk base, the pH of the calcium-enriched milk base product is adjusted to a pH of between 6.6 to 7.2 and then the pH-adjusted product is subjected to UHT treatment and that product is packaged, or alternatively, calcium glycerophosphate and a chelating agent are added to water to obtain a mixture, the pH of the mixture is adjusted to a pH of between 6.6 to 7.2 to obtain a solution, the solution is heat-treated to sterilize it, and then the sterilized solution is metered into a milk base which has been sterilized or ultrapasteurized.
