    Abstract: A process for the preparation of the carotenoid Zeaxanthin by isomerization and optional hydrolysis of a carotenoid precursor with an alkaline reagent in a polar organic solvent selected from the group consisting of an ether, polyhydroxyl alcohol, an ether-alcohol or a combination thereof. Also disclosed is a method of improving the pigment power of an oleoresin or vegetable extract by isomerizing and optionally simutanously saponifying the optically active carotenoids found therein by the action of an alkaline reagent in an organic medium; oxidizing the resulting optically active dihydroxycarotene and; reducing the resulting optically active keto product to generate the 3,3' dihydroxycarotenoid as a racemic mixture.
