  • Patent number: 7533948
Abstract: An adjustable shelf system for food equipment includes at least two front brackets, each having a base and a support member extending from the base. The support member has an outer edge and a series of vertically spaced notches. The front brackets are mounted such that the notched support surfaces extend substantially toward each other in a direction generally parallel with a vertical plane that intersects both of the front brackets. A shelf is supported by the front brackets, with extensions extending outwardly from the sides of the shelf. The front of the shelf can be lifted, allowing the shelf to be moved laterally to a position in which the back of the shelf is no longer supported by back support surfaces and the extensions are clear of the notches in the front brackets, thereby allowing the shelf to be moved vertically to a different height while being held horizontal.

  • Patent number: 6870136
Abstract: A proofing cabinet with an insulated proofing chamber having at least top and bottom proofing zones. The cabinet has uniformly controlled temperature in one or more proofing zones within the chamber, allowing dough within the chamber to rise the proper amount and ensuring that the resulting bread or bread product will be neither too flat nor too airy. The cabinet is useful for proofing a large quantity of items at a single time. The cabinet may also be used to hold foods at a specified temperature.

  • Patent number: 6109051
Abstract: A food preparation table comprises a storage compartment; a food preparation surface above the storage compartment; a cold wall tank adjacent the food preparation surface and above the storage compartment, the tank having a liner forming the inside walls and floor of the tank, refrigerant cooling passageways in heat transfer relationship on the outside of the liner; and support rails; a plurality of food storage pans each having flanges for supporting the pans on the support rails and side and bottom walls forming the food storage portion of the pan and extending from the flanges downwardly into the tank; a refrigeration system comprising a source of compressed refrigerant, an evaporator and interconnecting refrigerant lines that supply refrigerant to the evaporator and the tank refrigerant cooling passageways; and an air distribution system which circulates air past the evaporator to cool the storage compartment and inside the tank where it impinges on the inside walls of the liner and from there onto the wa
