    Abstract: A method for separating polysaccharides from tamarind seeds, comprising:(1) pulverizing the tamarind seeds to form particles of less than 80 microns;(2) dispersing the particles in an aqueous medium consisting essentially of water and 5-60% by weight of at least one water soluble organic solvent;(3) classifying the dispersion in a hydrocyclone, whereby the particles of polysaccharides descend to the bottom of the hydrocyclone, from which they are discharged; and whereby particles of other components, in particular proteins, simultaneously rise to the top of the hydrocyclone, from which they are discharged.
