An initial estimated salable lifetime of perishable items is determined. In real time, the initial estimated salable lifetime is reduced to an estimated remaining salable lifetime in a determination based on information including one or more conditions relating to the environment to which the perishable items are exposed and the transporting of the perishable items to a final destination. A manner of preserving the estimated remaining salable lifetime of the perishable items is determined by at least one of slowing the depletion of the estimated remaining salable lifetime and changing a transportation itinerary of the perishable items.
