  • Patent number: 11452296
Abstract: An apparatus and method are provided for the industrial manufacture of bakery products, such as long or elongated breads, rolls, baguettes, Parisian breads, round loaves. The apparatus includes a conveyor for conveying at least one piece of dough on a conveying surface in a transport direction, a substrate which is arranged above said conveyor. The substrate includes a contact surface at a side facing the conveyor. The apparatus is configured for providing a relative movement between the contact surface and the conveying surface. The contact surface is configured for touching an upper side of said at least one piece of dough on said conveying surface. And the apparatus further includes a heating device configured for heating at least a part of a circumference of the at least one piece of dough facing the contact surface for forming a film on said part of the circumference.

  • Patent number: 8893874
Abstract: A method and a device for aligning dough pieces on a conveying surface of a conveyor. The device is arranged for performing the following steps: providing at least one dough piece to a supply device arranged above the conveying surface; supplying the dough piece onto the conveying surface which is moving in a conveyance direction, and wherein the dough piece is supplied up-stream of a roller arranged at a distance above the conveying surface; blocking the conveyance of the dough piece by the roller, wherein the roller is driven to rotate in a rotation direction such that a peripheral velocity at a side of the roller facing the conveying surface is substantially opposite to the conveyance direction; temporarily reversing the rotation direction of the roller in order to pass the dough piece underneath the roller; and conveying the dough piece on the conveying surface.

  • Patent number: 8734143
Abstract: The invention relates to a dough roller device (2) comprising a first roller pair unit (21) and a second roller pair unit (22) situated below the first roller pair unit (21), wherein the relative position of the first and second roller pair units is adjustable. Preferably the rollers (31,32) of the first roller pair unit (21) define a passage for dough between the rollers, and wherein the relative position is adjustable for placing one of the rollers (33, 34) of the second roller pair unit (22) more or less below the passage. The invention further relates to an assembly for dough treatment, comprising a dough roller device (2) as disclosed above and a supply device for supplying dough, wherein the supply device comprises a conveyor (12) extending to an upper side of the dough roller device (2). The belt onto which the dough is deposited has flour dusted onto it before the dough is laid on the belt.
