    Abstract: A sachet for preparation of a beverage. The sachet has a compact roast and ground coffee cake having first and second cake opposed surfaces extending between to a peripheral cake edge. The first opposed surface is substantially convex and configured for ensuring leaktightness in an extraction chamber that is configured for injecting water and extracting the coffee. The peripheral edge has a peripheral surface that is generally normal to the opposed surfaces. An outer sheet of a flexible material is impermeable to oxygen and water vapor and contains and impermeably seals the cake therein.

    Abstract: A powdered substance, which is suitable for preparation of a beverage with an extraction fluid, is extracted for preparation of a beverage. The substance which is compacted in a form of a cake, is contained within a sachet between two sachet sheets which, prior to extraction of the substance, protect the substance against oxygen and water vapor and which extend to sealed edges for containing the substance within the sheets prior to and during extraction. In effecting extraction, one sheet is perforated to provide at least one opening for injection of extraction fluid, and extraction fluid is injected under pressure into the sachet for contacting and deforming the compacted substance cake and for extracting the substance in the sachet, and the other sheet is deformed against a surface having portions forming, upon deformation of the second sheet, local breakages in that sheet for opening that sheet for flow of extracted beverage substance.

In effecting extraction, one sheet is perforated first to provide at least one opening for injection of extraction fluid, and extraction fluid is injected under pressure into the sachet for contacting the substance and for extracting the substance in the sachet, and the other sheet advantageously is deformed against a surface having portions forming, upon deformation of the second sheet, local breakages in that sheet for opening that sheet for flow of extracted beverage substance.

    Abstract: An apparatus for extracting a substance contained in a sachet for preparation of a beverage has a first member having raised and hollow portions for forming a flow zone and a second member for cooperating with the first member to form a chamber to contain the sachet for extraction of the substance and to grip the edge of the sachet to ensure fluid-tightness upon being tightened, each member being configured for forming substantially half of the chamber for containing and ensuring a specific sachet shape. In one embodiment, the second member has provision for perforating an upper surface of a sachet for introducing water into the sachet. In another embodiment, the first member has an injector member which projects beyond the raised portions for perforating and introducing water into the sachet.

    Abstract: A substance for preparation of a beverage contained in a sealed flexible sachet is extracted with a device which provides a chamber formed by two members configured so that they each form a cavity which is substantially one-half of the chamber and so that when brought and fastened together, they form the chamber containing the sachet and provide for penetrating the sachet for subsequent injection of water for extraction of the substance. One member has a base which has a surface from which raised portions project and holes for flow of extract therethrough, and this member and the sachet are configured so that upon placing the sachet on the member, one sachet sheet is supported by the raised portions and a sealed peripheral sachet edge extends onto a rim of the member. Upon bringing and fastening the two members together, the members grip the sachet edge for fluid-tight sealing and shape the sachet uniformly and confine the substance within the sachet within the cavities, and the sachet is penetrated.

The membrane is affixed to a rim which extends from the sidewall in a direction away from the sidewall. An interior container surface of either the base or the cover membrane member contains a plurality of perforations which define openings which provide localized absence of a plurality of portions in the base or cover membrane member to provide a plurality of localized portions of reduced thickness so that when a fluid pressure for extraction of the substance for preparation of a beverage is applied, the localized portions of reduced thickness tear and open for beverage passage.

An opposing cartridge surface is pierced for injection of water into the cartridge while maintaining the base in the position adjacent the first surface, and while maintaining the base in a fixed position, water is injected under a pressure of greater than atmospheric pressure into the cartridge to deform the first surface remainder portion against the relief surface element first to press the first surface against the relief surface element and to wet and compact the substance and then to tear and open the remainder portion of the first surface for flow of fluid comestible from the cartridge and through the grille in a plurality of streams.

    Abstract: A bag-holder and an extraction machine for enabling extraction of a substance for preparation of a beverage contained in a pliant bag having at least one linear edge weld. The bag-holder has a housing configured to provide a cavity for containing the bag and an area which provides a grid of raised and indented elements and flow holes, the grid area providing for tearing the bag and for flow of extract from the housing during extraction. The bag-holder also has provision for securing the edge weld of the bag to keep the bag in the holder. The bag-holder also contains a bore in the area of the outflow grid for accepting a hollowed needle therethrough for penetrating into a bag for introducing extraction fluid into the bag and wherein the needle, during extraction, extends from an extraction machine which also has a part for, upon placement of the bag-holder together with the extraction machine, enabling sealing the part and the holder.

The device also has an injector which extends through the surface member for piercing into the cartridge. The injector extends longitudinally perpendicular to the flat surface of the surface member and has outlets disposed for directing water ejected from the injector for extraction of the beverage material at an angle of from 90.degree. to 65.degree. with reference to a longitudinally extending portion of the injector at the outlets.

    Abstract: Roast and ground coffee, which is contained in a sealed frustoconically shaped cartridge between a first cartridge face and a filter which separates the coffee from a second cartridge face, is extracted by first placing the cartridge in a holder to hold a rim of the cartridge so that the second face is adjacent a finger. The filter has a strength sufficient to withstand, without tearing, the pressure in the cartridge upon extraction, and the second face has a strength sufficient to deform and withstand, without tearing, a pressure in the cartridge upon extraction of greater than 1 bar but less than 10 bar. After placement of the cartridge, the first face is pierced with an injector, and a mixture of water and air is injected from the injector under a pressure of from 1 bar to 10 bar to deform the second face in a direction away from the filter and towards the finger to apply the second face against the finger to tear the second face to enable extraction liquid to flow from the cartridge.

The holder member has a first portion for enveloping and containing sides of a cartridge for supporting a cartridge, for enabling positioning a cartridge surface adjacent the sealing member surface and for enabling fluid-tight sealing of an edge of the cartridge surface to the sealing member surface. The holder also has a base having openings for enabling extracted coffee to flow out of the holder.

The teeth (10) are adapted to fit into the curved wall opening (2). The connector has a shoulder (13) at an end opposite the teeth, with an inner ledge on the shoulder facing the ledges on the teeth and adapted to compress the gasket (12) between the shoulder inner ledge and an outside surface of the curved wall adjacent the opening (2).
