    Abstract: Formed, ready-to-cook or ready-to-eat egg products are prepared by mixing a liquid egg composition comprising liquid egg in an amount sufficient so that the liquid egg composition is flowable at 35° F. with solid food inclusions, wherein at least 50% of the solid food inclusions have a longest dimension size of from 0.6 to 12 cm. At least about 50% of the solid food inclusions are at a temperature of less than 34° F. at the time of mixing. The resulting extrudable egg-based matrix comprises from 50 wt % to 90 wt % of the solid food inclusions, and is formed into a predetermined shape to provide a shaped, ready-to-cook or ready-to-eat egg product that is self-supporting for at least two minutes at an ambient temperature of 40° F. The shaped, ready-to-cook egg product may then be cooked.

    Abstract: Animal muscle portions are treated to form an enhanced muscle portion by providing a comminuted meat emulsion made from a first animal muscle tissue and having a pH of from about 6.5 to about 9.5, and adding the emulsion to an animal muscle portion in a manner that promotes uptake and/or distribution of the emulsion into the animal muscle portion to form an enhanced muscle portion. In an aspect, at least about 70% by weight of the protein of the tissue in the emulsion is solubilized, and the protein is not isolated from the tissue. In an aspect, no more than about 30% by weight of the protein of the tissue is precipitated. In an aspect, the tissue is not exposed to acid in a manner that would cause the pH of the tissue to be less than about 5.3. Products prepared by the processes are also described.

    Abstract: Pre-cooked turkey wing food products are made by a method comprising: providing a plurality of partitioned turkey wing segments; applying a marinade to the partitioned turkey wing segments to form a marinade/partitioned turkey wing segment composition having a ratio of marinade to partitioned turkey wing segments of at least 5:100 by weight; cooking the marinade/partitioned turkey wing segment composition in an environment that retains at least a majority of the marinade in the composition throughout the cooking process, for a time of at least 0.5 hours per pound at an ambient temperature of at least 160 F to provide a cooked marinade/partitioned turkey wing segment composition; cooling the cooked marinade/partitioned turkey wing segment composition; and providing the cooked marinade/partitioned turkey wing segment composition in a packaging format suitable for distribution. In an embodiment, the partitioned turkey wing segments are sub-partitioned midwing portions.

    Abstract: Fresh ground poultry meat is preserved by packaging fresh ground poultry meat in a sealed package together with one or more non-synthetic antimicrobials and pressurizing to an elevated pressure of from about 55,000 to about 65,000 psi pressure, maintaining the elevated pressure on the packaged fresh ground poultry meat for a time of from about 3.5 minutes to about 6 minutes and at a temperature of from about 30° to about 45° F. The non-synthetic antimicrobial is present in an amount effective to enhance the effectiveness of the application of the pressure to the packaged fresh ground poultry meat in reducing or eliminating pathogens.

    Abstract: An optical scanning inspection method projects a contrasting patterned image onto a specular mirror-like surface reflecting the contrasting patterned image to a camera that traverses through a range while scanning and recording the reflection that reveals defects and flaws on the specular surface. The defects cause distortion of the reflected pattern to enhance recognition and recording of the defects and flaws. The method is well suited for inspecting large solar cell arrays at a standoff distance.
