    Abstract: A roller configuration for forming a flat, rolled-out, continuously conveyed dough strip includes at least one rotatably driven roller and a counter-body. A roller gap for conveying and rolling-out the strip of dough is provided between the roller and the counter-body. A scraper which includes a plate-shaped scraper body is tensioned or clamped on one side and is pressed against the roller in a tensioned manner with a scraper edge on the opposite side. The scraper body includes a bending region and the cross-sectional area of the scraper body in the bending region is smaller than in the region of the scraper edge.

    Abstract: An apparatus to form a flat rolled-out continuously conveyed dough strip has a first roller and a second roller driven in mutually opposite rotary directions. A roller nip between the first and second rollers roll out a dough strip. A terminating ring is disposed concentrically with the first roller and the first roller projects radially for lateral sealing of the roller nip. A conveying device supplies the dough strip to the inlet region of the roller nip, where a movable inlet plate provided. The inlet plate is movable by a moving device from an operating position in which the inlet plate laterally seals the inlet region of the roller nip into a maintenance position in which the inlet plate is disposed at a distance from the roller nip. A clamping device moves the inlet plate onto the second roller in the operating position.

The upper roller is driven rotationally about a first axis of rotation and the lower roller is driven rotationally about a second axis of rotation. The direction of rotation of the upper roller is opposite to the direction of rotation of the lower roller. A roll nip is formed between the upper roller and the lower roller for guiding therethrough and rolling out the dough sheet. The rollers have a configuration which favors resting of the dough sheet on the lower roller and the axes of rotation of the two rollers can be inclined relative to one another.

The dough passes through the gap (15) formed between the guiding elements and is guided by said guiding elements (8, 9), which are driven in opposing rotatory directions, from an intake end (16) of the device to an outlet end (17) of the same. At least one of the guiding elements (8, 9) is profiled on its circumference with a plurality of grooves (20) extending side by side, perpendicularly to the longitudinal direction of the respective guiding element (8, 9). Said grooves (20) assist the transport of the dough through the gap (15) and enable the bubbles in the dough (5) to be maintained.

The shafts (6) are arranged so as to be fixed and are driven in a timed manner for the rotary movement. The star arms (5), of which there is an even number for each shaft (6), in the position directed towards one another block the downward flow of dough therethrough over the major part of the axial length of the shaft (6).
