Abstract: In the production of potable alcohols, a continuous fermentation stage is employed to pitch and/or initially ferment a wort containing fermentable sugars. An exemplary continuous stage involves the use of a gas lift bioreactor employing superflocculant yeast and stringent oxygen control. The continuous stage can then be followed by sending an at least partially fermented discharge from the continuous process is delivered to a batch processing stage for finishing.
