    Abstract: Enzyme preparations are obtained from Aspergillus phoenicis having high inulinase activity, a very low Michaelis constant, thermal stability, optimum inulinase activity across a wide pH range, and little sensitivity to heavy metal ion inhibition. The enzyme may be immobilized on an organic macroporous polymer or in an alginate gel.
