Abstract: A new canola protein isolate is provided along with a new canola protein. The new canola protein isolate is obtained from the supernatant from the production of a canola protein micellar mass and contains a predominance of 2S protein, The canola protein isolate derived from PMM contains a predominance of a 7S protein. Compositions of the canola protein isolate are provided.

Abstract: Flax mid linola oil seed protein isolates are provided. Such isolates are made by extracting flax and linola oil seed protein from the oil seed meal, concentrating the aqueous protein solution, diluting the concentrated protein solution to form protein micelles, collecting the protein micelles and drying the protein micellar mass. Further flax protein isolate may be recovered from the supernatant from the protein micellar formation. The protein isolates have a protein content of at least about 90 wt %. (N×6.25), preferably at least about 100 wt %, on a dry weight basis.

Abstract: The present invention provides a esterified and subsequently hydrogenated phytosterol composition for use alone or for incorporation into foods, beverages, pharmaceuticals, nutraceuticals, and the like. The composition has the advantage of enhanced solubility/dispersability, increased molar potency and enhanced stability over naturally isolated phytosterol compositions. Methods for the esterification and subsequent hydrogenation of the phytosterols are also provided.
