    Abstract: A finger joint cutting tool and tool assembly having stacked blade assemblies. The finger joint cutting tool includes a tool body with a plurality of cutter blade assemblies positioned and fixed at substantially equal intervals about the periphery of the tool body each including a plurality of blades stacked in a side-by-side arrangement. The blades are oriented and fixed to extend beyond the periphery of the tool body in a cutting position. Preferably, each of the blades includes a first cutting edge and a second cutting edge wherein either the first cutting edge or the second cutting edge may be oriented for cutting and each of the cutting edges of the blades are capable of being re-sharpened. A tool assembly includes multiple finger joint cutting tools mounted side by side on a shaft or spindle for rotation about an axis.

    Abstract: A knife assembly for use in a food cutting apparatus includes a compression ring adapted for threaded engagement with a base ring. The compression ring includes a threaded collar that tapers thinner towards its leading edge. The blade support ring tapers thinner towards a leading edge of the support ring sidewall. The blade support ring includes a sidewall having a plurality of blade second end receiving slots. At least two blades are connected at their first ends to a central cutter element and at their second ends to the blade support ring. As the compression ring engages the base ring, the advancing and opposing surfaces of the tapered sidewall of the compression ring and the tapered sidewall of the blade support ring cooperate imparting a compressive force against the ends of the blades, securing the blade with respect to the compression ring and the cutter element.

The blade assembly includes a blade head to which a blade is attached and tensioned by a tensioning assembly. The blade is attached to the blade head with a first end restrained by a first end retainer, a second end restrained by a second end retainer, a first bend positioned about a first return of the blade head, a second bend positioned about a second return of the blade head. The blade also includes a first leg segment extending in a first plane across an aperture of the blade head, and a second leg segment extending across the aperture of the blade head in a second plane at an angle to the first leg segment. The blade assembly for cutting a food product may also include a blade failure sensing device.
