    Abstract: Pecto-cellulosic compositions are prepared by treating comminuted citrus peel or other pectin-containing material in an acidified aqueous solution to solubilize pectin. The pectin is then recovered in the cellulosic matrix of the citrus peel by adjusting the pH of the solution and dried. The resulting pecto-cellulosic product is incorporated in food and other products.
