Abstract: Methods for sanitizing organic waste without introducing exogenous heat or chemicals are provided, which involve mixing organic waste with nutrient rich organic material to form a porous matrix that can be maintained at a temperature and duration sufficient to reduce the amount of living microorganisms in the mixture to sanitary levels. The invention also includes dewatering the organic waste prior to the sanitizing process, using various organic fibrous materials.
