  • Patent number: 8581154
Abstract: The present invention provides a method for effectuating temperature control in roller grill assembly. Some embodiments provide a roller grill assembly which provides enhanced measurement by utilizing temperature probes located in convective air streams generated in the roller tube. Certain embodiments also provide an improved method for maintaining of a food product temperature by utilizing an intermediate holding mode. Finally, certain embodiments provide improved current control by limiting the number of heating circuits of a food heater that may be simultaneously enabled such that the current draw does not exceed a maximum current draw.

  • Publication number: 20110277643
Abstract: A commercial toaster apparatus having a “quick start” feature that nearly instantly changes from a “standby” mode to a “toasting” mode. The “quick start” mode is provided by changing the circuitry of some of the quartz heating elements from a series configuration to a parallel one wherein a higher voltage can be applied for a controlled amount of time to regulate the quartz heaters without adversely affecting the life span of the heating elements. Temperature probes are used to adjust the duty cycle of the apparatus to enable a uniform toast color as the cavity chamber temperature of the toaster changes over time. A sensor is also provided that determines when a last product is placed on the conveyer and the duty cycle has been completed so that the unit will automatically switch to a “standby” mode, thus reducing the energy requirements of the toaster.

  • Publication number: 20110095016
Abstract: A safe product transfer apparatus that heats refrigerated food products and then hold those heated food products in a hold drawer until they can be transferred to a heater merchandizer, preferably a roller grill as needed. The apparatus features a control assembly. The assembly has a pre-selectable preheat temperature control to provide a preheat temperature when the “on” switch of said control is activated. A pre-heat indicator indicates when the preheat temperature has been reached so that the food products can be loaded into an operable drawer. A pre-selectable heat temperature control provides a heat temperature wherein the heat temperature corresponds to the safe serving temperature. A timer indicator counts down to zero from a pre-set time once the heat temperature control has been activated such that the food products are assured of having reached the pre-selectable heat temperature.

  • Patent number: 4550677
Abstract: A sifter for removing dough balls from breading, the sifter comprising a basket having foranamous side and bottom walls, the bottom wall being of conical configuration tapering downwardly to a centrally disposed discharge opening surrounded by a pair of spaced apart concentric annular walls projecting upwardly from the bottom wall and closed by a cover, spaced apart openings extending upwardly from the bottom edges of the annular walls of a size to pass dough balls therethrough, the openings in one of the annular walls being offset circumferentially with respect to the openings in the other annular wall, the annular walls serving as barriers to the passage of breading toward the discharge opening but permitting dough balls to pass inwardly for discharge as the basket is oscillated.
