    Abstract: A method of treating fresh cold fish is disclosed wherein eviscerated fish carcass is washed and treated with a bactericide to produce a fish in which the formation of trimethylamine is retarded. The bactericide is maintained at an elevated temperature which is selected to enhance reduction and retardation of bacterial outgrowth. Uncharged acetic acid is utilized as an example of such a bactericide.

    Abstract: A coated food product of this invention is produced by applying an aqueous dispersion containing water soluble algin to the surface of a food substrate. The aqueous dispersion has a viscosity effective to substantially uniformly coat the surface of the food substrate. A dry gelling mixture is then applied to the align-coated food substrate for a period of time sufficient to form a substantially continuous edible alginate film along the surface of the food substrate. The film is sufficient to effectively retard the migration of moisture from the surface of the food substrate thereby retarding dehydration thereof. The film is sufficient to constitute an oxygen barrier for retarding oxidation of the food substrate and to retain flavor within said food substrate. The dry gelling mixture comprises a dry carrier material and a dry gelling agent. The carrier material and gelling agent are in particulate form and have particle sizes sufficient to obtain a substantially uniform gelling mixture.

    Abstract: The fresh meat product is encapsulated in a substantially continuous film composed of alginate material. An aqueous dispersion containing water-soluble algin is first applied to the surface of the fresh meat. Then an aqueous gelling solution is separately applied to the algin-coated meat surface to form said substantially continuous film. The film is sufficient to effectively prevent the growth of anaerobic and retard the growth of aerobic bacteria on the surface of the meat. The film is also effective to prevent dehydration and discoloration of the meat and bone thereby extending the shelf-life of the coated meat product. By evaporation, the coating of freshly slaughtered animal carcasses enhances the chilling from animal body temperature to the desired cooled storage temperature.
