    Abstract: A device for producing a milk emulsion includes: a steam injection conduit (10), a milk conduit (15), an air conduit (16) which opens into a suction chamber (3), and an air control element (25) designed to adjust the air flow passing through the air conduit. The device also includes a tubular segment (14) having an outer surface (24) at which the air conduit (16) opens. The air control element (25) includes first and second sealing elements (29, 30) provided on the outer surface (24). In addition, the air control element (25) can move between (i) a cappuccino position in which the opening (22) of the air conduit (16) communicates with the atmosphere and (ii) a hot milk position in which the first and second sealing elements define a sealed space containing the air conduit opening. A coffee machine including one such device is also disclosed.
