  • Patent number: 4935192
Abstract: The present invention describes a method of treating fish meat which becomes softened due to contamination with sporozoa parasites. The method involves mixing salt and an improved freeze-dried water extract of potato or a freeze-dried raw potato powder with the contaminated fish meat paste. A particular extraction process is described which results in an improved color characteristic of the finished product. Also, a method of obtaining a freeze-dried raw potato powder which has an improved color characteristic, is described. The invention also pertains to the use of the powder in treating meat from uncontaminated fish to improve the gelation characteristic thereof.

  • Patent number: 4643900
Abstract: A method for producing bakery products is provided wherein a dough conditioner composition of allium material is incorporated into dough formulations including flour, water and leavening agents. The allium material is used in effective amounts to function in reducing the mix-time required to develop a dough, increasing the absorption of water by the flour during dough development, and increasing the extensibility of the dough. The preferred allium material used in the preparation of the dough improving composition is garlic, more preferably in a dehydrated form and in combination with an inert organic material. The developed dough is processed using conventional techniques and procedures including baking into a standard bakery products such as bread, crackers, pizza and sweet goods.

  • Patent number: 3935075
Abstract: The present invention provides an automatic streaking device for bacterial specimens, which device produces a repetitive, overlapped plurality of figure eight patterns. An electrically conductive loop is displaced in a direction perpendicular to the major axis of the figure eight pattern. Means are provided for non-linearly advancing the loop in a direction perpendicular to the major axis of the figure eight pattern so as to vary the resulting pattern in a predetermined manner. Means are also provided for automatically sterilizing the loop when the series of figure eight movements are terminated. A first motor drives a pair of crank arms having different lengths in order to determine the amplitudes of the figure eight patterns in two mutually perpendicular directions. A second, variable speed, reversible motor is coupled to and drives a carriage that supports the first motor and the crank arms so as to vary the center-to-center spacing between adjacent figure eight patterns.
