    Abstract: A meat separator separates meat part attached to bone part by coming into contact with outer peripheral surface of the bone part of bone-in meat that moves relatively with respect to the meat separator. The meat separator includes a plurality of clamp blocks. The clamp blocks each include scraping contact portion that comes into contact with the outer peripheral surface of the bone part, and the scraping contact portions cooperate with each other so as to clamp the outer peripheral surface of the bone part. At least one of the clamp blocks is configured so that at least a part of the scraping contact portion of the clamp block is displaceable in a plurality of directions along outer surface shape of the bone part, and the at least one of the clamp blocks includes biasing function portion that elastically pushes back the displacement in direction moving away from bone part.

At the same time, the entire length of a work is measured, and the knee joint length is calculated from previously collected data based on the measured entire length of the work. Positioning of a cutting blade and a meat separator is performed based on these values in subsequent process stations, and cutting of a tendon adhering to a knee joint and tearing of thigh meat are performed. A thigh bone is separated from a lower thigh in a further process station.

A lifting and lowering roller 92 mounted on a lifting and lowering shaft 70 travels in a traveling path 94 to lower and transfer the work w to a next work station. By bring a swinging roller 84 mounted on the lifting and lowering shaft 70 in contact with the cam plate 170, 180, 182, the lifting and lowering shaft 70 is rotated by a setting angle so that the work w faces round cutter blades 22, 64. Thus, the pathway of the round cutter blades 22, 64 can be approximately straight, thereby simplifying and reducing the cost of the moving mechanism.
