    Abstract: An interference ribonucleic acid containing specific sequence for inhibiting MMP1, which is composed of 19 to 25 nucleotides, wherein the interference ribonucleic acid has a sequence selected from the group consisted of the sequences as set forth in, or essentially identical to, SEQ ID NO: 5, SEQ ID NO: 6, SEQ ID NO: 7, SEQ ID NO: 8, SEQ ID NO: 9, and SEQ ID NO: 10. By means of the interference ribonucleic acid and MMP1 with high specificity binding, gene and protein expression of endogenous MMP1 of cancer cell can be inhibited, and then the interference ribonucleic acid can be used for pharmaceutical composition to prevent or treat cancer metastasis or to improve wrinkle resistance.

    Abstract: The present invention provides a method of producing chicken essence powder, comprising hydrolyzing the chicken raw material by using the composite protease combining alkaline protease from Bacillus licheniformis with neutral protease from Bacillus subtilis, and spray drying a chicken essence concentration to obtain the chicken essence powder. In addition, the present invention also provides a chicken essence powder produced by the aforementioned method. The chicken essence powder has a particle size ranging from 50 ?m to 100 ?m, a molecular weight ranging from 200 Da to 2500 Da, and an amount of cholesterol less than 3 milligrams per 100 grams of chicken essence powder. In addition, the present invention also provides a method for scavenging ?,?-diphenyl-?-picrylhydrazyl (DPPH) radical by administering the chicken essence powder to a host in need thereof.

The present invention also relates to a method for producing said N-glycosylation-modified recombinant chicken cystatin, wherein a site-directed mutated cDNA encoding chicken cystatin is cloned in an expression vector, with which a yeast strain is in turn transformed, and the yeast transformant is then cultured for producing a recombinant chicken cystatin wherein the Asn residue in the Asn106-Thr108 of its amino acid sequence that is produced by said site-directed mutagenesis can be modified by N-glycosylation. The N-glycosylation-modified recombinant chicken cystatin disclosed in the present invention has improved stability in a freezing-thawing process and in a heating process.

The present invention further provides bacteriocins produced from the strains. The present methods are capable of producing processed products with reduced growth of unwanted microorganisms, improved flavor and enhanced economic value. The pentocins are effective on the inhibition of unwanted microorganisms thereby insuring the foodstuff a good quality during storage.
