Also included are coated articles that comprise a substrate coated with a coating layer, wherein the coating layer is formed from a composition that comprises: an asphalt material, a polymer that is not a polyol; and a polyol. Also included are methods of improving the processability of a asphalt material comprising combining together an asphalt material, a polymer that is not a polyol, and a polyol, wherein the resultant composition exhibits improved processability as compared to an asphalt composition that does not contain a polyol.
