Patent number: 4557936Abstract: A soybean-based fibrous food material of improved preservability can be produced by incorporating polyhydric alcohol into a fibrous soybean material. The fibrous soybean material is prepared by grinding whole grains of soybean between two opposing disc grinding members. The food material can also be improved in texture by incorporating metal cations in a form of edible salt and/or an organic acid having 2 to 6 carbon atoms, with polyhydric alcohol into soybean material. The thus obtained soybean-based fibrous food material is useful as an ingredient of meat products, fish products and so on.Type: GrantFiled: October 19, 1982Date of Patent: December 10, 1985Assignees: Asahi-matsu Foods Inc., Takeda Chemical Industries, Ltd.Inventors: Shiro Kudo, Kunihisa Akaba

Patent number: 4511588Abstract: Preservable granular particulate "tofu" (soybean curd), which is smooth and does not liberate water during storage and therefor is suited to an alternative for salad topping, tofu spread and scrambled egg, can be produced by coagulating soybean milk or soybean protein paste in heated oil at a temperature between above 75.degree. C. and below 140.degree. C. The soybean milk is of a higher concentration than that conventionally used for producing ordinary tofu. Hardening of the granular tofu which is caused with increased solid contents can be overcome by elevating the pH of the paste as compared with that used in production of ordinary tofu. A small amount of egg white is desirably added to coagulate the soybean milk smoothly in a shorter period of time in heated oil. The granular tofu thus prepared is preservable and does not liberate water during storage, because the coagulation is done at a higher temperature than in the case of ordinary tofu, and the surface of granule is covered with an oily film.Type: GrantFiled: April 20, 1983Date of Patent: April 16, 1985Assignees: Asahi-Matsu Foods Inc., Mitsubishi CorporationInventors: Shiro Kudo, Mitsuyoshi Hayashi

Patent number: 4504514Abstract: A soybean-based fibrous or granular food material having improved texture can be produced by incorporating edible organic acid having 2 to 6 carbon atoms and/or metal cations in a form of edible salt into fibrous or granular food material. The thus obtained food material is useful as an ingredient of meat products, fish products and son on. The fibrous or granular food material is prepared by grinding soybean material between two grindstone plates of a colloid mill.Type: GrantFiled: October 19, 1982Date of Patent: March 12, 1985Assignees: Asahi-matsu Foods Inc., Takeda Chemical Industries, Ltd.Inventors: Shiro Kudo, Megumi Mukaiyama

Patent number: 4144358Abstract: A cheese-like food containing the total ingredients of soybeans is produced by forming a mixture of natural cheese and crushed whole soybeans which have been heated to denature protein and to deactivate trypsin inhibitor and hemaglutanine, agitating the mixture, and fermenting the agitated mixture by the enzymatic action of microorganisms in the natural cheese. The cheese-like food is free from soybean odor and has taste and texture of cheese.Type: GrantFiled: June 7, 1977Date of Patent: March 13, 1979Assignee: Asahimatsu Koridofu Kabushiki KaishaInventors: Shiro Kudo, Keizo Ishino, Kunihisa Akaba

Patent number: 4137339Abstract: A method of preparing a processed food material from soybean comprising soaking whole grains of soybean in water, heating the grains at 80 - 200.degree. C with superheated steam for less than a minute to deactivate the physiologically active substances in the soybean, crushing the grains thus treated with water followed by further subdividing into finer particles with a homogenizer to completely destroy the soybean cells, and adding a protein coagulating agent to precipitate the protein together with fat and fibrin.FIELD OF THE INVENTIONThe present invention relates to a method for preparing a processed food material from soybean which tastes good, has no soybean odor, and is smooth in mouth.BACKGROUND OF THE INVENTIONSoybean contains an enzyme which, on being activated, reacts with oil in the soybean grain. The reaction product causes the soybean odor.Soybean also contains tripsin-inhibiting substances and oligosaccharides, which may lead to a flatulence.Type: GrantFiled: August 29, 1977Date of Patent: January 30, 1979Assignee: Asahimatsu Koridofu Kabushiki KaishaInventors: Shiro Kudo, Keizo Ishino, Yoshinori Takashima
