G1, G2, G3, G4, G5 are identical or different residues of -oses selected from glucose, galactose, mannose, fructose, ribose, xylose and arabinose, g1, g2, g3, g4 and g5 being equal to 0 or 1, the sum of g1, g2, g3, g4 and g5 being at least equal to 1. The composition has emulsifying capacity in the presence of electrolytes or in the case of paraffin-based emulsions.
