    Abstract: Provided herein are high potency sweeteners containing at least 95% rebaudioside M generated from Saccharomyces cerevisiae strains engineered to produce high purity rebaudioside M when fermented with sugar cane syrup. In addition, provided are methods of purifying the high potency sweeteners from cleared fermentation broths. Also provided are sugar substitutes containing the high potency sweeteners and methods of making same.
