    Abstract: Improved features for a filter system for a deep fat fryer are described. The fryer includes a movable filter pan disposed below the cooking tank which is fed by gravity when the tank is drained through a downspout. The downspout is curved and rotatable from a down position when it is in use/storage to an up position when it is not in use and a stabilizing clip is mounted on the downspout to secure a separate polishing tube when it is in the down or horizontal position to allow one handle to lift two pipes at the same time for removal of the filter pan. An inline removable filter is provided in the oil return line, and the return line is slidably supported on the side of the filter pan so that it can rise and fall with the debris in the filter pan.

The mechanical assist in lifting the food to be cooked is provided by opposed springs and cam members on a main axle whereby when an operator raises and lowers a handle, the rotational movement of the handle is translated into vertical linear motion and the tension in the springs together with the cams are used to maintain baskets or trays of food in the desired position until the operator moves the handle again.

    Abstract: An improved efficient deep fat fryer is described. Heat exchange within the fryer tank is facilitated by a “U” shaped burner tube which is cantilever mounted from a side of the tank and a burner system is provided to circulate in a spiral pathway products of combustion through the burner tube. An internal turbulator baffle is provided to both facilitate the spiral circulation through the tube and to facilitate heat transfer from the combustion gases to burner tube walls. Exhaust gases are circulated downwardly from the burner tubes to a plenum beneath the tank which also has heat transfer baffle plates to facilitate heat exchange. Ultimately the products are expelled through a flue. The system further comprises filter bags for continuously filtering the oil which are disposed in a sump at the surface of the oil so that oil continually spills from the tank into the sump where it is filtered preferably by one or more bags of cloth material.

    Abstract: A filter system for a deep fat fryer is described. The filter system can be used in a single fryer or with two or more sequentially operated fryers. In the later case, a common filter pan is used with a horizontal filter in the pan, disposed below a common drain pipe. A return pipe is mounted in the center of the filter. This pipe is connected to a pump inlet so that oil to be filtered is admitted to the pan above the filter, and filtered oil is removed from the pan through the filter. Filtered oil is then circulated by the pump through a three port valve to return the oil to the appropriate fryer tank. If the valve is closed the oil will be routed through the valve to an adjacent tank valve for admission to that tank so that a single pump may be used for a plurality of tanks. An optional flush system can also be provided so that oil can be used to flush a tank manually.

    Abstract: A baffle system for a deep fat fryer is described. The baffle system improves heat transfer from straight heat tubes which pass through the tank. The baffle is disposed within the tube to encounter products of combustion from a gas fired burner which enter the tube, and causes the products of combustion to swirl against the internal walls of the heat tube. In addition the baffle provides radiant surfaces which, when heated, radiate heat energy against the walls of the tube and the baffle rests on the tube wall itself to heat the same by conduction. Each baffle includes a plate with wings struck therefrom disposed at an acute angle against the flow of combustion products and each wing terminates in a flat tab disposed parallel to the plate for radiant energy.

    Abstract: A natural draft combustion system having a housing enclosing at least a portion of a material heating container and at least one combustion space in heat exchange relation with the material heating container and extending from a heat inlet side of the housing to a heat outlet side of the housing. A downward angled burner having a burner outlet in fluid communication with a heat inlet to the at least one combustion space is disposed on the heat inlet side. A natural draft combustion products exhaust conduit in fluid communication with the at least one combustion space is disposed proximate the heat outlet of the housing. As a result, a flame produced by the burner is introduced into the combustion space with a downward velocity component, which, in turn, results in improved efficiency over comparable conventional systems.
