Abstract: Systems and methods for observing and analyzing swallowing are disclosed. According an aspect, a system includes an intubating scope and image capture device configured to capture one or more images of an interior of a subject's throat during swallowing of bolus. The system also includes a computing device configured to receive the captured one or more images. The computing device is also configured to analyze the image(s) to measure an amount of tissue covered by bolus in the one or more images. Further, the computing device is configured to present information indicating the measure of the amount of tissue covered by bolus.
