The method for processing ginseng includes the steps of: preparing washed ginseng; liquid-packaging the ginseng into a pouch; and treating the liquid-packaged ginseng with ultra-high pressure at a pressure of 550 to 600 MPa for 30 seconds to 2 minutes.
