    Abstract: The description relates to a process for the continuous production of beer in which the wort with an oxygen content of 0.5 to 3.0 mg per litre is continuously fed to a fermenter in the form of a loop reactor operating at a temperature of 6 to 25° C. and a pressure of 1.5 to 2 bar, in which the wort spends an average time of 4 to 40 hours, there is a biocatalyst containing a biologically active yeast and a partial stream of the wort is continuously fed into the circuit. In the process, the entire cycle of the fermenter is conducted continuously in a maturing fermenter designed as a loop reactor into which 1 to 8% of the wort taken to the fermenter is also continuously introduced, operating at a temperature of 10 to 20° C.

    Abstract: Isomaltulose-forming microorganisms are immobilized on a carrier that is a weakly basic anion exchange substance in the form of a substantially non-compressible porous particulate solid material, and are used for isomerization of sucrose to isomaltulose. A preferred carrier contains microfibers or microparticles of diethylaminoethyl cellulose adherently bound by agglomeration with polystyrene. The isomerization may be a continuous conversion in one or more columns packed with the carrier. Isomaltulose may be hydrogenated to form isomalt for use in sweetening. Microorganisms can be immobilized on the carrier by feeding microorganisms to a column containing the carrier. After microorganism immobilization, the carrier may be treated with a crosslinking and/or flocculating compound. Regeneration of the carrier is carried out by removing microorganisms, washing and reloading with fresh microorganisms.

The preparation process comprises bioreactor refreshing cycle and a lactic acid production cycle, wherein during the production cycle a solution comprising substantially pure feedstock is recycled through a bioreactor containing refreshed microorganism cells, the lactic acid produced being neutralized by adding an alkali, and the recycling is discontinued when the alkali consumption is substantially diminished, and during the refreshing cycle the microorganism cells are refreshed by recycling through the bioreactor a carbohydrate solution enriched with nutrients, thus replenishing the capacity of the microorganisms to produce an acid, and recovery of lactate or conversion thereof into lactic acid or other salt.
