    Abstract: A method for producing a phospholipid-containing composition which includes 10% by weight or more of phosphatidylserine based on the whole phospholipid-containing composition, a content of a polyunsaturated fatty acid being from 10 to 40% by weight based on the total amount of constituent fatty acids, the method including the following steps (1) and (2) in this order, and the following steps (3) and (4) in this order inexpensively and stably supplies a phospholipid-containing composition which includes phosphatidylserine to which a large amount of the polyunsaturated fatty acid is bonded at the 2-position thereof. Step (1): performing an esterification reaction of a polyunsaturated fatty acid with lysophospholipid using phospholipase A2 (PLA2) to obtain phospholipid. Step (2): adjusting an activity of PLA2 in the phospholipid to 10 U/g (phospholipid) or less after the step (1).

    Abstract: Provided is a method for producing a phospholipid at low cost by reusing phospholipase A2 in a method for producing the phospholipid whereby an arbitrary fatty acid is bonded to the 2-position of a phospholipid using an esterification reaction catalyzed by phospholipase A2 in glycerol. The method for producing a phospholipid is characterized by comprising conducting an esterification reaction catalyzed by phospholipase A2 between a lysophospholipid and an acyl donor in glycerol to from a phospholipid, adding a solvent immiscible with glycerol to form a glycerol layer and a solvent layer, extracting said phospholipid into said solvent layer, allowing phospholipase A2 to migrate into said glycerol layer, and, after separating the glycerol layer and distilling off the solvent remaining therein, further adding to the residual glycerol solution the lysophospholipid and the acyl donor to thereby conduct the esterification reaction again with use of phospholipase A2 remaining in said glycerol solution.

    Abstract: A trisaturated fatty acid, glyceride-containing oil composition is produced in a step (1) of preparing an oil mixture containing saturated fatty acids (S) in an amount of 45 to 75 wt % and unsaturated fatty acids (U) in an amount of 25 to 55 wt % in all constituent fatty acids by mixing an oil containing SSSs in an amount of 35 wt % or more with an oil having an iodine value of 35 or more; a step (2) of interesterifying the oil mixture with a lipase; a step (3) of obtaining an oil containing liquid and solid oils by crystallizing the oil mixture without use of solvent until the value (X-Y), wherein X is the SSS content (wt %) of the oil after interesterification and Y is the solid oil content (%) during crystallization, becomes 2 to 13; and a step (4) of separating the liquid oil by fractionation of the oil.
