    Abstract: An inventive method and a device for the biotechnological reduction of sugar substances in fruit educts for the purpose of obtaining low-sugar fruit products characterized by enzymatic and/or fermentative reaction processes. Said method is characterized by a closed-loop control process, by means of which the pH value in the low-sugar fruit product is adjusted to a predetermined higher value, as compared to the pH value in the fruit educt, in such a way that during the reduction of the sugar substances by at least 30% by weight to less than 40% by weight, the pH value is increased between 0.6 and 1.0 pH units; or that during the reduction of the sugar substances by at least 40% by weight to less than 50% by weight, the pH value is increased between 0.7 and 1.1 pH units; or that during the reduction of the sugar substances by at least 50% by weight to less than 65% by weight, the pH value is increased between 0.8 and 1.

    Abstract: The invention relates to a method for the enzymatic production of emulsifiers containing mono- and diacylglycerides. In a first step a), a mixture of a phospholipid component and a triacylglyceride component is prepared, then in step b) a quantity of an aqueous solution containing a (phospho)lipase is added to the mixture obtained, to produce a water content of the mixture of between 3 and 15 wt. %. In a subsequent step c), the mixture obtained in the previous step is reacted at a temperature ranging between 20° and 80° C. over a period of at least two hours and said mixture is then dried.

    Abstract: In this process for preparing a ?-1,3-glucan, the glucan-containing matrix is treated with a protein having ?(1,3)-glucanase activity, wherein the concentration of the glucanase amounts from 0.001 to 3.0% by weight. The glucan-containing matrix can be a fermentation broth, a culture medium or a suspension, where appropriate containing unsolved solids, cell constituents and/or cell fragments, or else a mycelium, a hydrocolloid or a powder preparation having a solvent proportion of from 20 to 99.9% by weight. The duration of the enzymatic treatment should be between 15 minutes and 24 hours and the treatment should be carried out continuously. The invention also envisages the glucan-containing matrix being filtered or centrifuged, after it has been treated enzymatically, and the glucan finally being separated off.
