Abstract: Described herein are economic, scalable, waste-free, and environment-friendly methods of boosting resveratrol concentration in peanut seeds to enhance this nutritionally important product as functional food for human consumption. Methods for improvement of animal feed with resveratrol-enriched split and damaged peanut seeds, skins, and embryos are described. Inexpensive materials and processing conditions for efficient methods are described.
