The oxygen is removed from the pocket so as to sufficiently reduce an oxygen level therein so as to inhibit or prevent the formation of metmyoglobin on the surface of the raw meat.     Abstract: Absorbing oxygen from a closed space at a rapid rate, particularly in food packaging, is made possible by introducing an alcohol-water mixture as an activator for iron-based absorber systems, preferably including an acid to control pH. Preferred alcohols are aliphatic alcohols, particularly, monohydric alkanols, such as methanol, ethanol, n-propanol, isopropanol, sec-butanol and t-butanol. Such absorber-activator combinations are capable of rapidly reducing the oxygen in a closed package. A preferred acid is orthophosphoric acid used in an amount sufficient to establish a pH of about 0.6 to 4. A preferred iron-based absorber system employs sponge iron, optionally including a dibasic acid cooperating with the orthophosphoric acid to control pH in the system. In one preferred embodiment, the iron-based absorber is pre-activated by contacting with the activator in the substantial absence of oxygen for a predetermined period of time.

An adhesive applicator applies adhesive to the oxygen scavenger which has been separated from the chain of interconnected oxygen scavengers. A conveyor conveys the separated oxygen scavenger to a position which is adjacent to a film layer which is used to form an outer package of the modified atmosphere package so that the oxygen scavenger is attached to a surface of the film layer by the adhesive. The film layer is subsequently formed into the outer package so that the oxygen scavenger that is attached to the film layer is contained within the outer package.

The system and method first employ an oxygen reduction technique such as evacuation, gas flushing, and/or scavenging to quickly reduce the oxygen level in the pocket to a first non-zero level, and then employ an activated oxygen scavenger to further reduce the oxygen level to zero percent after the package is sealed. The oxygen scavenger is activated with an oxygen uptake accelerator to increase the rate at which the oxygen is absorbed.

    Abstract: A modified atmosphere packaging method creates a modified atmosphere in a package including an inner package and an outer package. The inner package is composed at least partially of a polymeric material substantially permeable to oxygen, while the outer package is composed of a polymeric material substantially impermeable to oxygen. After a food product such as raw meat is placed within the inner package, the inner package is flushed with a desired mixture of gases to substantially remove oxygen from the inner package. The flushed inner package is then sealed and inserted into the outer package without sealing the outer package. Next, the outer package is flushed with the desired mixture of gases to substantially remove oxygen from the outer package. After flushing the outer package, the outer package is sealed. An oxygen scavenger is provided in the package to substantially absorb any residual oxygen within the package.
