    Abstract: Described is use of Salvia hispanica L. (Chia) for controlling, in one embodiment reducing, blood glucose levels, preferably post-prandial blood glucose levels. This is useful in both non-diabetic and diabetic individuals, but especially in diabetic individuals. Also described is the use of chia in reducing postprandial blood glucose, insulin sensitivity, blood pressure, and oxidative stress in such individuals. The present invention further found that Chia can be used to improve endothelial function, coagulation, fibrinolysis and iron status.
