    Abstract: A frozen stuffed fish ball with low soup loss and the method of preparing the same. By combining hydrocolloid and oil pre-emulsification technology, the problems of taste of powder, soup loss of fish balls after freeze-thaw cooking and the taste of frozen stuffed fish balls after freeze-thaw cooking are solved. The use of konjac gum and carrageenan or curdlan respectively, combined with oil pre-emulsification technology, also effectively improves the texture and brightness of the outer skin of fish balls. Compared with a single addition of conventional technology, the hardness, elasticity and brightness are increased, solving loosen structure, brightness and other problems due to freeze-thaw cycle. Further, it may be used in the fish ball processing line for preparing fish ball with fillings and other stuffed surimi products.

    Abstract: The present invention provides a chitooligosaccharide-N-geraniol derivative and a preparation method and application thereof. The degree of substitution of a chitooligosaccharide-N-geraniol derivative is from 0.26 to 0.283. The method includes dissolving oligosaccharide in dimethyl sulfoxide, dissolving geranyl bromide in dimethylformamide, and then mixing, performing a water bath reaction and adding acetone in after the water bath reaction, performing a centrifugation and collecting precipitates, performing Soxhlet extraction and vacuum drying to obtain the chitooligosaccharide-N-geraniol derivative. The present invention has the advantages of easy preparation method, low cost, simple purification method and stable properties. The chitooligosaccharide derivative has good water solubility, antibacterial activity against Staphylococcus aureus, Escherichia coli and other bacteria, and has good application prospect in the fields of medicine, food, cosmetics, agriculture, etc.

    Abstract: The present invention provides a method for isolating and purifying immuno-modulating polypeptide from cow placenta, which is characterized by using the steps of anion-exchange chromatography, gel exclusion chromatography and reverse-phase high performance liquid chromatography to isolate and purify immuno-modulating polypeptide from cow placenta, identifying its activity of stimulating lymphocyte proliferation in vitro by MTT method, then determining its molecular weight by MALDI-TOF-MS, its isoelectric point by CIEF and its amino acid sequence with analyzer for protein sequencing. Since the obtained immuno-modulating polypeptide by the method according to the present invention has more than 90% purity, its bioactivity can reach medicinal standards.
