    Abstract: A system and method for coordinating the preparation of food items onboard a mobile kitchen vehicle. An onboard computing system can receive first and second orders from a remote computing system and determine a preparation schedule for the first and second orders. The preparation schedule can be based on preparation instructions, estimated arrival times, and estimated delivery times. The onboard computing system can display pre-route preparation instructions and post-route preparation instructions for preparing food items of the first and second order so that the food items are delivered in an optimized condition.

    Abstract: A water-based cooking apparatus onboard a vehicle includes a cooking bay and a controller. The cooking bay can be sealed with a lid so that water does not escape the cooking bay when the vehicle is in motion. The controller receives, from a computing device onboard the vehicle, cooking instructions including commands operable to perform one or more of filling the cooking bay with water, setting a temperature for the cooking bay, and adjusting a salinity of water in the cooking bay. The computing device can display cooking instructions on a display and can send status reports to a remote command center.

    Abstract: A fryer system includes a fryer and an oil storage assembly. The oil storage assembly includes a feed pipe coupled at a first end to a fry pot of the fryer and coupled at a second end to a pump assembly. The pump assembly includes a pump and a valve. The oil storage system further includes a storage pipe coupled at a first end to the pump assembly and coupled at a second end to a storage tank. The fryer system can perform an oil fill operation whereby the pump drives cooking oil from the storage tank to the fry pot and an oil drain operation whereby the pump drives cooking oil from the fry pot to the storage tank. A controller controls the oil fill and oil drain operations and transmits communications to a remote command center. The controller can also transmit communications to a driver display device.
