    Abstract: A metering unit for dough and related foodstuffs having a dough feeder unit, support structure, dough hopper, effluent housing, drive motor and centerless helix, with the effluent housing including an inlet, center and outlet section. The centerless helix is disposed within the effluent housing, and is rotatably coupled to the drive motor. Dough is fed into an aperture in the input section of the effluent housing, and upon rotation of the centerless helix, is discharged from the outlet section of the effluent housing. The internal flowpath of the effluent housing can include a separate discharge liner to prevent the centerless helix from contacting the flowpath wall. Additional control mechanisms can be included to limit motor power output and protect the system in event of an overpressure condition. The system is portable, and can be coupled to a conventional conveyor system to create an integrated approach to dough metering and transport.

    Abstract: A bakery oven system is disclosed which includes a bakery oven through which an endless conveyor may pass that carries bakery products to be treated in the oven. The conveyor includes a conveyor section located out of the oven and adapted to pass through a grid burn-off unit which serves to clean the grid on the conveyor. The grid burn-off unit includes a separate enclosure having a burner arrangement for applying heat to the conveyor to burn off residue on the conveyor. A plurality of brushes are located downstream of the burn-off enclosure, in the direction of travel of the conveyor, to clean carburized material off of the conveyor.

    Abstract: A bakery oven of the type employing a continuous conveyor therein for carrying goods to be baked through an oven enclosure includes an air distribution system adapted to direct heated air from near the top wall of the oven enclosure to the bottom and sides thereof. The air distribution means includes a fan mounted on the top wall of the oven which includes at least one fan blade located within the oven enclosure, a fan shaft secured to the fan blade and extending through the enclosure top. The fan shaft is mounted on the top of the oven for rotation and is driven by a separate motor also mounted on the top of the enclosure in spaced relation to the shaft. A drive belt is provided to transmit rotary power from the motor to the shaft. As a result, the shaft is fully exposed for air cooling and heat from the interior of the oven is not transmitted to the motor.

    Abstract: A method and apparatus for removing a bakery carrier screen, which is carrying a bakery product and traveling on a moving conveyor system, from underneath the carried bakery product and transferring the bakery product to an exit conveyor during substantially continuous forward motion of the bakery product is provided. The carrier screen upon which the bakery product is placed has a generally rectangular and planar surface with a plurality of parallel longitudinal slots extending from the leading edge to the trailing edge of the screen. A product entrance conveyor is provided which has a plurality of substantially parallel and spaced apart endless conveyor belts terminating in generally aligned pulleys, and a conventional full width endless conveyor for removing the products arranged at the forward end of the entrance conveyor belts.

    Abstract: A bakery oven, of the type employing a continuous spiral conveyor for carrying goods to be baked through an oven enclosure, employs an air distribution system to direct heated air from near the top wall of the oven enclosure to a plenum chamber, and from there through an air distribution network to at least certain ones of the tiers of the spiral conveyor. Preferably, heater elements are disposed beneath alternate ones of the tiers of the conveyor system within the oven enclosure, while the air distribution pipes are disposed beneath the remaining tiers. This arrangement serves to decrease fuel consumption for the burners, thereby increasing productivity, and further serves to decrease the stratification of heat layers within the oven enclosure, thereby providing uniform baking conditions throughout the oven enclosure.

    Abstract: The specification discloses a chain link assembly and chain incorporating said assembly, the chain being especially adapted for use in enclosed track-type conveyors. The assembly includes a pair of identical, elongated link members fitted together and mating with one another. Each link member has chain pin or fastener receiving openings at either end and a bridge member adapted to engage, support, and space the opposite link member. One end of each link member at the same end of the assembly includes a curved surface with elongated chain pin receiving openings to allow articulation of the assembly at that one end.
