    Abstract: Disclosed herein are three geneses of proteins herein established to exhibit a fructose to allulose epimerase activity that are useful for production of allulose from fructose at high temperatures and at low pH in the range of 4.5 to 6.0. Two of the three geneses descend phylogenetically from a common ancestral protein defined herein, and these geneses are distinguished from each other by different parental descendant proteins also defined herein. The proteins with high levels of sequence identity to the parental nodes defining from these two geneses generally exhibit higher levels of specific fructose to glucose epimerase activity than prior known fructose to allulose epimerases and exhibit such activity at low pH. A third genus is not defined by phylogenetic origin except by not descending from the same ancestor as the first two geneses but generally exhibit similar levels of fructose to allulose epimerase activities as prior art epimerases described to be useful for fructose to allulose conversion.

The rod may pressurize fluid within the first cylinder. The pressurized fluid may flow from the first cylinder through a valve and into an accumulator. The first cylinder may amplify pressure of the fluid. The pressurized fluid in the accumulator may actuate the first cylinder. The movement of the rod of the first cylinder may cause simultaneous actuation of a second cylinder. A controller may monitor pressures and positions of components of the hydraulic system and control the valve arrangement.

This composition has shown to be effective in maintaining the desirable red color of the meat products, as well as delaying the formation of oxidative byproducts, when compared to untreated meat products, maintaining the low oxidative products in food emulsions and maintaining the low secondary oxidative products and acceptable sensory profiles in extruded foods. This composition also has shown to be effective in delaying the formation of oxidation products in margarine and salad dressing.

The dehydration step involved the removal of water from the buffered vinegar using a dryer. The standardization step involved a plating (spraying) process wherein white distilled vinegar (300 grain) was applied to the dried, buffered vinegar to meet the target active component as well as other physical and chemical product specifications.

Also disclosed are methods for producing D-glucuronic acid and glucurono-?-lactone comprising incubating a mixture including myo-inositol, myo-inositol oxygenase, and oxygen under conditions effective to form 5 grams D-glucuronic acid per liter of the mixture to 400 grams D-glucuronic acid per liter of the mixture. Glucurono-?-lactone can be produced from the D-glucuronic acid product. Also disclosed are organisms and nucleic acids suitable for use in such methods.
