  • Patent number: 11819029
Abstract: The present teaching relates to a method for forming rings from dough or other masses. A mass portion is positioned into a forming device on an abutment under a pressing device, wherein the pressing device has a centering ring, a displacement rod, a cut-out ring and a press ram. The centering ring is placed on the abutment, wherein the mass portion is laterally enclosed by means of the centering ring and is pressed by means of the press ram against the abutment into an approximately cylindrical form with a uniform thickness. A core hole is made in the mass portion by means of the displacement rod, so that a thin core of the mass portion remains between the abutment and the displacement rod. The core is punched out by the cut-out ring, and the press ram is lifted off the mass portion formed into a ring.

  • Patent number: 10900823
Abstract: A method for measuring the mass distribution along the width of a strip, in particular a dough strip, moved in the longitudinal direction of the strip and having a specified target width. At least two weighing cells are arranged at a distance to each other with respect to the width of the strip. The weight of at least one dough strand or dough piece having a width defined by the distances of the weighing cells is sensed. The mass of the partial pieces of the strip is determined on the basis of the distance of the weighing cells to each other, the position of the weighing cells along the width of the strip, the strip speed, and the measured values of the weight of the partial pieces sensed by the weighing cells, in particular over a defined time period.

  • Publication number: 20200045984
Abstract: A device for forming a dough strip, including a dough supply device, by means of which dough can be introduced into the device, a draw-in roller which can be rotated about its axis, a forming roller which can be rotated about its axis, a discharge roller which can be rotated about its axis, and at least one drive, by means of which the draw-in roller and/or the forming roller and/or the discharge roller can be driven. The axes of the draw-in roller, the forming roller, and the discharge roller are arranged parallel to one another in a mutually spaced manner, and a dough chamber is formed between the draw-in roller, the forming roller, and the discharge roller. The device has two cover shields which laterally delimit the dough chamber, in particular on the end faces of the draw-in roller, the forming roller, and the discharge roller.

  • Publication number: 20190126504
Abstract: A device for cutting partial strips having a defined specifiable mass, preferably from a dough strip, including at least one cutting unit, which has a blade. The cutting unit is adjustably fastened to a retaining element of the device in such a way that the blades cut a dough strip, which is conveyed past the device and is moved in the longitudinal direction of the dough strip, into at least two partial pieces predominantly parallel to the direction of motion of the dough strip. The cutting unit includes an adjustment mechanism, wherein the adjustment mechanism is designed in such a way that the position of the blade can be adjusted with respect to the position of the cutting unit, in particular over the width of the dough strip, by automated control.
