  • Patent number: 5776525
Abstract: A process and an apparatus for continuously and efficiently producing high protein foodstuff such as cheese curd, by continuously sprinkling and pouring a protein solution such as cow's milk or soybean milk from above onto the water surface of a warm water bath through a nozzle having multiple holes. A constant amount of warm water kept at a fixed temperature is supplied to the water bath. This process converts the protein solution into curd useful in producing various types of cheese.

  • Patent number: 5084285
Abstract: A desalted milk whose pH and ash content have been both adjusted to desired values can be obtained by subjecting a raw milk, including whole milk, whey, permeate, mother liquor, skim milk or buttermilk, to electrodialysis and cation exchange process, adding a milk of a specific pH value to the resultant milk, and then subjecting the thus-obtained milk to anion exchange process.

  • Patent number: 4433618
Abstract: An apparatus for continuously manufacturing fibrous high protein foods comprises an apparatus for supplying a fixed quantity of fibrous structure formable food raw material from a nozzle, said food material being obtained through the steps of curdling cow's milk such as whole milk or skim milk by the addition of a coagulating agent and removing whey from the resulting curds, an apparatus for extending the raw material supplied from the supplying apparatus by applying a fixed tension thereto while delivering the raw material by the aid of free rollers and drive rollers, an apparatus for cooling the extended raw material supplied from the extension apparatus; and an apparatus for cutting the raw material supplied from the cooling apparatus in fixed lengths.

  • Patent number: 4146456
Abstract: Cow's milk and/or its analogues are demineralized and the ash balance thereof adjusted with ion-exchange membrane electrodialysis apparatus. The method comprises demineralizing cow's milk or its analogues in a first stage consisting of one or more of electrodialysis stacks at a demineralization rate of below 50 percent, then further demineralizing thus obtained milk in a second stage consisting of one or more of electrodialysis stacks at a demineralization rate of more than 60%, transferring thus demineralized milk to concentration compartments consisting of one or more of electrodialysis stacks of the first stage, then discharging the milk which was adjusted.
