Patent number: 8012524Abstract: The present invention aims at providing novel spread and edible oil having excellent characteristics as a spread or an edible oil. An edible oil and a suitable emulsifier, in a water-in-oil type emulsion is filled with a suitable gas propellant into an aerosol container, and the emulsion is discharged as mousse form at the time of jetting.Type: GrantFiled: December 19, 2003Date of Patent: September 6, 2011Assignee: Meiji Dairies CorporationInventors: Yoshinori Komatsu, Shigeru Tamai

Publication number: 20090017176Abstract: The invention relates to a process of producing fermented milk or milk powder, including removing ions from milk, and reducing the dissolved oxygen concentration in the milk, followed by subjecting the milk to a heat treatment, as well as concentrated milk and milk powder with good flavor and an effect of improving physico-chemical properties as a raw food material, which have never been found in conventional concentrated milk and milk powder.Type: ApplicationFiled: August 29, 2006Publication date: January 15, 2009Applicant: MEIJI DAIRIES CORPORATIONInventors: Takashi Sugawara, Masashi Shiokawa, Akemi Nakaoka, Yasushi Kubota, Yoshinori Komatsu

Publication number: 20060078659Abstract: The present invention aims at providing novel spread and edible oil having many excellent characteristics as a spread or an edible oil, new mouth-feel and flavor which are not encountered in the conventional spread and edible oil, and excellent storage property and excellent operationality. As a result of the investigation, the inventors of the present invention found that, when an edible oil and a suitable emulsifier, or a composition made into a water-in-oil type emulsion in use is filled with a suitable gas propellant into an aerosol container, a discharged food is foamed to be in the mousse foam at the time of jetting. The inventors further found that the obtained mousse-type food can be used as novel mousse-type spread and mousse-type edible oil which not only shows excellent characteristics as a spread and an edible oil, but also has a new mouth-feel and flavor which are not encountered in the conventional food, and further show excellent storage property and excellent operationality.Type: ApplicationFiled: December 19, 2003Publication date: April 13, 2006Inventors: Yoshinori Komatsu, Shigeru Tamai

Patent number: 5912032Abstract: A process for producing a calcium-supplemented milk drink, by adding to cow's milk, a whey mineral being of a calcium content of 2 to 8% by weight and produced by removing the protein and lactose from whey and concentrating the resulting whey by ultrafiltration and/or microfiltration. By the process, there is produced a calcium-supplemented milk drink having good flavor with no precipitate of calcium salts or being provided with attractive flavor, and being capable of passing through the sterilization process to be prepared into a commercially aseptic state.Type: GrantFiled: May 7, 1996Date of Patent: June 15, 1999Assignees: Meiji Milk Products Company, Limited, Davisco Foods International, Inc.Inventors: Yoshinori Komatsu, Tadashi Nakatsubo, Hideo Ohtomo, Tamotsu Kuwata, Mark Mitchell Davis, Martin Edward Davis
